USDA-Approved Standards and Specs

Stock Yards Angus products meet rigorous specifications and are backed by third-party certifications to ensure our high-quality standards are achieved.

 

1.  Lean color, texture, firmness and overall skeletal characteristics – must meet the requirements for maturity in its qualifying USDA grade.

 

2. USDA Upper 2/3 of Choice or higher quality level

 

3. Medium or fine marbling texture for excellent consistency

 

4. Marbling score of minimum modest or higher for rich flavor and tenderness
