Not All Salads Need Lettuce!

What do you mean, not all salads need lettuce?

The US Foods® culinary support team has been working with customers to develop salad selections that prioritize vegetables over lettuces. In the fall, play into the season by combining roasted root veggies with other ingredients—you’ll stay competitive on pricing without worrying about the market price of lettuce and off-season quality. Utilize pre-cut veggies for quality consistency and to reduce prep labor expenses.

Here are four other no-lettuce salad ideas from the US Foods culinary support team:

Tri-Color Carrot Salad

Caramelized fennel, toasted pistachios, Cajun-spiced garbanzo beans, pomegranate seeds and maple-tahini dressing

Pear and Watermelon Radish Salad

Fried purple mustard greens, shaved watermelon radish, cinnamon and port wine-poached pears, smoked blue cheese, toasted nori, sea salt and lemon juice.

Roasted Beet and Brussels Sprout Salad

Quinoa, toasted walnuts, sage, blood oranges, roasted Brussels sprouts, basil, goat cheese and US Foods Paris dressing  

Shaved Zucchini Salad

Crispy leeks, asparagus, basil, mint, pine nuts, burrata and and herbed vinaigrette.
